Spicy Tomato Sauce

A good, basic tomato/marinara sauce recipe is vital to your repertoire! Really, you can freestyle a tomato sauce recipe, but this is how I like mine….

Ingredients:
  • 1 red onion, chopped
  • 3 cloves garlic, chopped
  • 1 large ripe tomato
  • a dash of liquid aminos
  • a dash of red wine (optional)
  • 1 tsp basil, 1 tsp oregano
  • 1 tin chopped tomatoes
  • Hot sauce, to taste!
Sauté the onion and garlic in a small amount of olive oil. Chop the tomato and add it to the mix, along with the liquid aminos, red wine and herbs. Cook for 10 minutes over a very low heat. Add the chopped tomatoes and hot sauce (I use Chinese hot chili sauce) and continue to simmer over a very low heat for at least 10 minutes.

Serve with pasta, meat/cheatballs, or whatever takes your fancy!
