Wrap Time (cheating)

I’m going on holiday in a few days and have very much lost the will to cook. Much laziness will occur in the kitchen before I board that glorious Eurostar train. Tonight was a wrap night, and my stubborn favourite is the always tremendous PPK scrambled tofu, with some chopped spring onion and dairy free cheese (Daiya, in this case, but don’t be jealous of me). Sliced avocado would have been in the mix if those in my fruit bowl weren’t so devastatingly underripe.

Scrambled tofu may have the same bad vegan rep as lentils, but try this once and change your mind forever.
