Easy Guacamole

Guacamole, how do I love thee? Let me count the ways: one avocado, two avocado, a hundred glorious ripe avocados. And more.

Anyhoo, this is the easiest guacamole recipe you’ll ever meet. All you need is one big, fat, wonderfully ripe avocado…..and half a lime. Chopped onion and tomato optional. Salt and pepper to taste.

I’d advise you to invest in a mini food processor, rather like this one. I’d like to say I invested in my own, but it moved into my house along with my boyfriend a couple of years back, and I won’t make any quips about what I get more pleasure from these days at all.

So, juice half of your lime. Put into food processor. Add avocado. Blend! Add salt and pepper to taste. Feel free to throw in half a (white or brown) onion if you like. Once blended, go ahead and throw some chopped baby tomatoes in if you’re so inclined.

Smear onto chilli, fajitas, scrambled tofu, or whatever takes your fancy.
